Ingredients
Serves 4
- 2 flake fillets
- 1/4 cup plain flour
- 1 – 2 tsp oregano
- 1-2 tsp salt flakes
- ¼ cup veg oil
- Pinch salt
- ¼ Iceberg lettuce
- Tomatoes
- Cucumber
- White salad onion
- Tartare sauce
- Souvlaki/Pita wraps
- Baking/greaseproof paper
- Foil
MEthod
- Mix together the flour, oregano and salt
- Cut the flake into long strips approx. 3cm wide
- Roll the fillets in the flour mix
- Prepare the salad items – shred the lettuce, thinly slice the tomato, onion, and peel ribbons of cucumber
- In a hot pan, add the oil and pan fry the fillets (2min each side)
- To wrap the souvlaki, place a sheet of baking paper on the bench and lay wrap on top, slightly overlapping the top of the paper.
Layer with lettuce, tomato, onion, cucumber, add a squeeze of tartare, add the flake, and sprinkle a little extra oregano.
Gently fold the wrap lengthways in half and use the baking paper to wrap the souvlaki and tuck the base under to hold in place. - Wrap in foil and place in a sandwich press to toast the souvlaki
