

Ingredients
Serves 4
- Fresh Gummy shark (4x portions cut into a total of 8 strips)
- Tortillas or Tacos x8
- Shredded lettuce
- Sour cream
Marinade
- Juice of 1 lime
- 1tblsp veg oil
- Small handful of thyme
- Small handful of basil
Salsa
- 1x large tomato
- ½ avocado
- ¼ red onion
- Handful coriander leaves (optional)
- Salt and pepper
- 1 tsp olive oil
MEthod
- Mix the marinade together and pour over flake fillets. Allow to marinade for 10 minutes
- Dice all the salsa ingredients, mix together with a drizzle of oil and season with salt and pepper
- Over med-high heat, pan fry the flake for 4 minutes (turning halfway)
- Layer the tacos starting with the lettuce, a fillet of flake, a generous serve of salsa and top off with the sour cream
