Here’s my interpretation of Duck(fish)a` l`Orange with a delicious sticky, citrus glaze.
Ingredients
4 duckfish fillets (boarfish)
1 orange (zest and juice)
1/3 cup maple syrup
2 tbsp soy sauce
salt and pepper
MEthod
- Lay out the fillets and pat dry with paper towel
- Sprinkle with a little salt and set to the side in a shallow baking tray
- In a small bowl, mix together the remaining ingredients for the marinade with a fork
- Pour half the marinade over the fish and allow to stand for 20-30 minutes
- Preheat BBQ or oven to 180 degrees celcius
- Place tray onto BBQ and close lid (or into oven). Cook for 8 minutes
- Pour remaining marinade over the fish and continue to cook for a further 4 minutes (or until the fish is cooked through)
